Introduction
 
I decided to introduce this column so my visitors can join me to learn more about Thai cooking. My recipes might be slightly different from the real Thai recipes, but only  because I adapted them to Melbourne's varieties of fresh food. As you all know that not every single ingredient is readily available when not in Thailand. With my experience from owning a Thai restaurant for 5 years I think I can share what I have learnt in a simple easy to understand format. In this column I hope that you will enjoy Thai cooking as much as me and enjoy the benefits of a good healthy diet!
 
   
Ingredients:
- your choice of protein. (beef, chicken, pork or even seafood)
- Chives (if you can't find some you can use some other vegetable instead)
- tamarind
- bean shoots
- vegetable oil
- soy sauce
- chicken stock
- lemon
- turnip 

 

 
   

Preparation :
 


1.
Soak up your rice noodle in "cold" water for half an hour before cooking.

 


2. Cut up all the vegetables.

 


3. rinse all the bean shoots in cold water and put them aside

 


4. Rinse dry shrimps a few times with hot water to make them less salty

 


5.
Prepare prawn or if you use meat - cut them up

 


6. open the tamarind sauce jar and prepare by using 2 spoonfuls for 1 serve put in the bowl and add in 1 tea spoon of sugar. Then stir until sugar is melted.

 


4. Cut up some turnip in small pieces

 



Instruction :
 


1. Heat up your wok with a little bit of oil in it in on medium heat

 


2. crack one egg in per serve.

 


3.
wait until the egg turn a little bit white.

 

 


4. Stir it around for a few second then add your meat at this step.

 

 

 


5. add all the noodles in and stir it through with some sauce. Then add some water or chicken stock in so noodle will steam and cook softer.

 

 


6. Put in all of the turnip and shrimps then stir through

 


7. Add Chives and bean shoots in at this step then stir through for 5 seconds then turn the gas off.

*serve with fresh lemon and dry chilly :)
